Dried, and preserved

Two different processes stand behind the word "dried" on this table, and they behave differently on your shelf.

Air dried means the water left and nothing replaced it. The stem goes light and brittle, the scent stays strong, and a rough hand will shatter a lavender head. Most of the flowers here are dried in that sense, and so are all of the petals.

Preserved means the sap was drawn out and a glycerin solution drawn in while the plant was still taking up liquid. The leaf stays supple instead of going crisp, so a preserved eucalyptus stem bends rather than snaps and survives being tied to a shower arm and moved around. It is also why preserved stems feel faintly cool and are heavier than they look.

Neither process protects anything from light. A preserved stem in a bright window fades exactly as fast as a dried one. And neither wants water: a dried stem in a vase of water rots at the cut end within days, because the stem is no longer alive and the water has nowhere to go.

Keeping them

Light · damp · dust

Three things end a dried bunch, and they arrive in a fixed order. Light takes the colour, damp takes the structure, and dust makes both look worse than they are. None of the three is reversible, and all three are slow enough that where you put the vase on the first day decides most of the outcome.
